Ingredients
  

Vegetables
  • 2 cups Spinach Fresh or frozen
  • 1 cup Bell Pepper Diced
  • 1 cup Carrots Sliced
Proteins
  • 1 can Chickpeas Drained and rinsed
  • 1 cup Quinoa Rinsed
Spices and Seasonings
  • 2 tablespoons Olive Oil For cooking
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black Pepper To taste
Liquid
  • 2 cups Vegetable Broth

Method
 

Prepare Quinoa
  1. Rinse quinoa under cold water. In a large pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
Cook Vegetables
  1. In a skillet, heat olive oil over medium heat. Add bell pepper and carrots, sauté for 5 minutes until softened. Stir in spinach and cook until wilted.
Combine Ingredients
  1. Add cooked quinoa and chickpeas to the skillet with vegetables. Season with garlic powder, cumin, salt, and pepper. Stir well to combine and heat through.
Serve
  1. Serve warm, garnished with additional spices or herbs if desired.
