- Season the lamb shanks with salt and pepper.
Searing
- In a Dutch oven, heat olive oil over medium-high heat.
- Sear the lamb shanks on all sides until browned, about 8-10 minutes.
- Remove the shanks and set aside.
Cooking Vegetables
- In the same pot, add onion, carrots, celery, and garlic. Sauté until softened, about 5 minutes.
Deglazing and Braising
- Add red wine to deglaze the pot, scraping up any browned bits.
- Stir in beef broth, tomato paste, thyme, and rosemary.
- Return the lamb shanks to the pot, ensuring they are submerged in the liquid.
- Cover and transfer to the oven. Braise for 2.5 to 3 hours, until the meat is tender.
Serving
- Remove the shanks from the oven and let rest for 10 minutes before serving.
- Serve with the braising liquid and vegetables.
