Ingredients
  

Lamb Shank
  • 4 pieces lamb shanks about 1 lb each
Vegetables
  • 2 tablespoons olive oil for searing
  • 1 large onion chopped
  • 2 carrots carrots chopped
  • 2 stalks celery chopped
  • 4 cloves garlic minced
Liquids and Seasoning
  • 2 cups red wine preferably dry
  • 2 cups beef broth or stock
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Preparation
  1. Preheat the oven to 325°F (160°C).
  2. Season the lamb shanks with salt and pepper.
Searing
  1. In a Dutch oven, heat olive oil over medium-high heat.
  2. Sear the lamb shanks on all sides until browned, about 8-10 minutes.
  3. Remove the shanks and set aside.
Cooking Vegetables
  1. In the same pot, add onion, carrots, celery, and garlic. Sauté until softened, about 5 minutes.
Deglazing and Braising
  1. Add red wine to deglaze the pot, scraping up any browned bits.
  2. Stir in beef broth, tomato paste, thyme, and rosemary.
  3. Return the lamb shanks to the pot, ensuring they are submerged in the liquid.
  4. Cover and transfer to the oven. Braise for 2.5 to 3 hours, until the meat is tender.
Serving
  1. Remove the shanks from the oven and let rest for 10 minutes before serving.
  2. Serve with the braising liquid and vegetables.
