For the Marinade
  • 1/2 cup Bourbon
  • 2 medium Fresh peaches ripe and juicy
  • 1/4 cup Soy sauce
  • 2 tablespoons Honey
  • 2 cloves Garlic minced
For the Salmon
  • 4 fillets Salmon wild-caught if possible
  • 2 tablespoons Olive oil
For Garnish (Optional)
  • 1/4 cup Fresh basil or cilantro adds freshness
  • 2 pieces Lemon wedges for serving

Method
 

Preparation
  1. Preheat your oven to 400°F.
  2. Place salmon fillets skin-side down on a lined baking sheet.
  3. In a bowl, whisk together bourbon, peach preserves, soy sauce, and minced garlic.
  4. Generously brush the marinade over the salmon fillets and let sit for 10 minutes.
  5. Roast in the preheated oven for 15-20 minutes until opaque and flakes easily with a fork.
  6. Switch to broil for the last 2-3 minutes until the top is caramelized and bubbly.
Serving
  1. Garnish with fresh basil or parsley before serving.
