Ingredients
  

Salad Ingredients
  • 1 can black beans rinsed and drained
  • 1 cup corn fresh or canned
  • 1 cup cherry tomatoes halved
  • 1 medium red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon cumin
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Ingredients
  1. In a large mixing bowl, combine the black beans, corn, cherry tomatoes, red bell pepper, red onion, and cilantro.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lime juice, cumin, minced garlic, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the salad ingredients and toss gently to combine. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
