Ingredients
  

Filling
  • 1 lb ground beef preferably lean
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup cheddar cheese shredded
  • 8 large corn tortillas
Red Sauce
  • 2 cups red enchilada sauce store-bought or homemade
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
Toppings
  • 1 cup sour cream
  • 1 cup fresh cilantro chopped
  • 1 cup sliced jalapeños optional

Method
 

Prepare the Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet and sauté until onion is translucent.
  3. Stir in cumin and chili powder, and cook for an additional 2 minutes.
  4. Remove from heat and mix in shredded cheddar cheese.
Assemble Enchiladas
  1. Preheat the oven to 350°F (175°C).
  2. Spread a thin layer of red enchilada sauce on the bottom of a baking dish.
  3. Warm the corn tortillas in a skillet or microwave until pliable.
  4. Spoon a portion of the beef filling into each tortilla, roll them up, and place seam-side down in the baking dish.
  5. Pour remaining red sauce over the enchiladas and sprinkle with additional cheese if desired.
Bake
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
Serve
  1. Garnish with sour cream, cilantro, and jalapeños before serving.

Notes
