Prepare the Filling
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add chopped onion and minced garlic to the skillet and sauté until onion is translucent.
- Stir in cumin and chili powder, and cook for an additional 2 minutes.
- Remove from heat and mix in shredded cheddar cheese.
Assemble Enchiladas
- Preheat the oven to 350°F (175°C).
- Spread a thin layer of red enchilada sauce on the bottom of a baking dish.
- Warm the corn tortillas in a skillet or microwave until pliable.
- Spoon a portion of the beef filling into each tortilla, roll them up, and place seam-side down in the baking dish.
- Pour remaining red sauce over the enchiladas and sprinkle with additional cheese if desired.
Bake
- Cover the baking dish with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
Serve
- Garnish with sour cream, cilantro, and jalapeños before serving.
