Ingredients
  

Rice Base
  • 1 cup long-grain white rice rinsed and drained
  • 2 cups chicken broth or vegetable broth for a vegetarian option
  • 1 medium tomato finely chopped
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder optional for heat
  • 1 tablespoon fresh cilantro chopped, for garnish

Method
 

Cooking the Rice
  1. In a medium saucepan, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  2. Stir in the rinsed rice and cook for about 2-3 minutes, stirring frequently until the rice is lightly toasted.
  3. Add the chopped tomato, chicken broth, salt, cumin, and chili powder (if using). Bring to a boil.
  4. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  6. Garnish with fresh cilantro before serving.

Notes
