Ingredients
  

For the Filling
  • 1 can artichoke hearts chopped and packed
  • 8 oz cream cheese softened
  • 1/2 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1/2 cup bread crumbs
For the Mushrooms
  • 8 large portobello mushrooms
  • 2 tbsp olive oil for drizzling

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. Prepare the mushrooms by gently wiping them clean with a damp cloth. Remove the stems and set them aside.
  3. Chop the mushroom stems finely and sauté them in a skillet over medium heat with a drizzle of olive oil until they soften, about 3-4 minutes.
  4. Mix together the sautéed stems, cream cheese, chopped artichokes, garlic, Parmesan cheese, and parsley in a bowl until well blended.
  5. Stuff each mushroom cap generously with the artichoke mixture.
  6. Arrange the stuffed mushrooms on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 20-25 minutes, until the tops are golden brown and bubbly.
