- 2 large Portobello mushrooms (about 250g)
- 1 cup whole-wheat breadcrumbs (100g)
- 1 small onion, finely chopped (75g)
- 2 cloves garlic, minced
- 3 tbsp soy sauce (45ml)
- 2 tbsp extra virgin olive oil (30ml)
- 2 leaves romaine lettuce
- 1 medium tomato, sliced
- 4 tbsp vegan mayo or avocado mayo
Instructions
- Clean the portobello mushrooms with a damp paper towel and remove the stems.
- In a skillet over medium heat, add 1 tbsp of olive oil and sauté the chopped onions until translucent (about 5 minutes). Add minced garlic and cook for another minute.
- In a large bowl, combine sautéed onions, garlic, breadcrumbs, soy sauce, and chopped mushroom stems. Mix until well combined.
- Shape the mixture into four patties.
- Heat the remaining olive oil in a non-stick skillet over medium-high heat. Cook each patty for about 5 minutes per side until golden brown.
- Assemble the burgers on buns with lettuce, tomato slices, and vegan mayo.
