  • 1 lb ground beef (80/20)
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 (14.5 oz) can diced tomatoes
  • 2 medium carrots, diced
  • 2 medium Yukon Gold potatoes, chopped
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, eggs, garlic, salt, pepper, and thyme. Form into golf-ball-sized meatballs.
  2. Heat olive oil in a large pot over medium heat. Sauté onions until translucent; add carrots and cook for another 3 minutes.
  3. Brown meatballs in the pot for about 7 minutes.
  4. Add diced tomatoes and beef broth; stir in potatoes and season with bay leaves.
  5. Bring to a boil then reduce heat to low. Cover and simmer for about 1 hour.
  6. Remove bay leaves before serving. Enjoy with crusty bread or over rice.
