Ingredients

Scale
  • 4 medium russet baking potatoes
  • 3 boneless, skinless chicken breasts (approximately 1 lb)
  • 1/2 cup buffalo sauce
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup ranch dressing
  • 2 green onions, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes clean.
  2. Bake potatoes directly on the oven rack or on a foil-lined baking sheet for 45-60 minutes until fork-tender.
  3. While baking, heat oil in a skillet over medium heat. Season chicken with salt and pepper; cook for 6-8 minutes per side until no longer pink. Shred using two forks.
  4. Combine shredded chicken with buffalo sauce in a bowl until well coated.
  5. Once baked, slice potatoes open lengthwise and fluff insides with a fork. Spoon buffalo chicken mixture into each potato.
  6. Top each potato with shredded cheddar cheese and return to the oven for another 5 minutes until cheese melts. Drizzle with ranch dressing and garnish with chopped green onions before serving.
