  • 1 lb flank steak
  • 1 tsp fajita seasoning
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 4 flour tortillas (10 inches)
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 2 tbsp olive oil

Instructions

  1. Marinate the flank steak with fajita seasoning for at least 1 hour.
  2. Heat 1 tbsp olive oil in a skillet over medium heat and sauté the onions and bell peppers until tender (5-7 minutes). Remove from skillet.
  3. Increase heat to high, add remaining olive oil, and cook the marinated steak for 3-5 minutes per side until browned. Slice thinly.
  4. Lay a tortilla flat; sprinkle cheese on one half, add vegetables and steak, top with more cheese, and fold.
  5. Grill each side until golden brown (2-3 minutes). Slice into wedges and serve hot.
