- 1 medium onion, chopped
Instructions
- Preheat your oven to 375°F (190°C) and prepare a 9×13 inch baking dish with nonstick spray.
- In a skillet over medium heat, brown the ground meat. Add onions halfway through cooking until translucent.
- Stir in black beans, diced tomatoes (with juices), and taco seasoning; simmer for about 5 minutes.
- Layer tortillas in the baking dish followed by half of the meat mixture and a sprinkle of cheese. Repeat layers finishing with cheese on top.
- Cover with foil and bake for 25 minutes; remove foil and bake an additional 10 minutes until bubbly and golden.
