Ingredients

Scale
  • 14 oz smoked sausage (kielbasa or andouille)
  • 2 medium sweet potatoes (about 2 cups cubed)
  • 1 cup bell peppers (mixed red and green)
  • 1 medium onion
  • 3 cloves garlic
  • 2 tbsp extra virgin olive oil
  • 3 tbsp low-sodium soy sauce

  1. Prepare your ingredients by washing and peeling the sweet potatoes, then cutting them into small cubes. Dice the onion, slice the bell peppers into strips, and mince the garlic.
  2. In a large skillet over medium-high heat, warm the olive oil until shimmering. Add the diced smoked sausage and cook until browned (about 5 minutes).

  4. Stir in minced garlic and sauté for an additional minute until fragrant.
  5. Pour in soy sauce and mix well to coat all ingredients. Cook for another couple of minutes until everything is heated through.
  6. Serve hot on plates, drizzling any remaining juices over each serving.
