  • 3 to 4 lb chuck roast
  • 2 large Vidalia onions, sliced
  • 4 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 2 tbsp olive oil for searing

Instructions

  1. Set the Instant Pot to “Sauté” mode. Heat olive oil and sear the chuck roast on all sides until browned (about 4-5 minutes per side). Remove and set aside.
  2. In the same pot, sauté sliced onions until golden brown (about 10 minutes), stirring occasionally.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Deglaze the pot with a splash of beef broth, scraping up any browned bits.
  5. Return the roast to the pot with remaining broth, thyme, balsamic vinegar, salt, and pepper. Seal the lid and cook on “Manual” high pressure for 60 minutes.
  6. Allow natural pressure release for 15 minutes before manually releasing remaining pressure. Shred or slice the pot roast and serve topped with onions and broth.
