- 2 large Vidalia onions, sliced
- 4 cups low-sodium beef broth
- 4 cloves garlic, minced
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- 2 tbsp olive oil for searing
Instructions
- Set the Instant Pot to “Sauté” mode. Heat olive oil and sear the chuck roast on all sides until browned (about 4-5 minutes per side). Remove and set aside.
- In the same pot, sauté sliced onions until golden brown (about 10 minutes), stirring occasionally.
- Add minced garlic and cook for another minute until fragrant.
- Deglaze the pot with a splash of beef broth, scraping up any browned bits.
- Return the roast to the pot with remaining broth, thyme, balsamic vinegar, salt, and pepper. Seal the lid and cook on “Manual” high pressure for 60 minutes.
- Allow natural pressure release for 15 minutes before manually releasing remaining pressure. Shred or slice the pot roast and serve topped with onions and broth.
