- 3 large yellow onions, sliced
- 2 cups low-sodium beef broth

- 2 tbsp Worcestershire sauce

- Salt and pepper to taste
Instructions
- 1. Preheat your oven to 325°F (160°C). Prepare a sturdy roasting pan.
- 2. In a skillet over medium-high heat, melt butter and sear the seasoned chuck roast on all sides until browned (about 4 minutes per side).
- 3. In the same skillet, add sliced onions and cook until golden brown (15-20 minutes), stirring occasionally.
- 4. Layer caramelized onions at the bottom of the roasting pan and place the seared chuck roast on top. Pour in beef broth mixed with Worcestershire sauce, then sprinkle thyme and minced garlic.
- 5. Cover tightly with aluminum foil and bake for about 3 hours or until fork-tender.
- 6. Allow resting for 10 minutes before slicing. Serve hot over mashed potatoes or with crusty bread.
