- 2 large yellow onions, sliced
- 2 cups low-sodium beef broth
- 4 garlic cloves, minced
- 1 tbsp fresh thyme (or more to taste)
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- 2 tbsp olive oil for searing
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef chuck roast with salt and pepper. In a heavy-bottomed pot, heat olive oil over medium-high heat and sear the roast on all sides until browned (about 3-4 minutes per side). Remove from pot.
- Add sliced onions to the same pot and cook until golden brown (10-15 minutes), stirring occasionally.
- Stir in minced garlic and thyme during the last couple of minutes of onion cooking time. Pour in beef broth and balsamic vinegar, scraping up brown bits from the bottom.
- Return the roast to the pot, cover it, and place it in the oven.
- Slow cook for 3-4 hours until fork-tender. Serve with sauce drizzled on top.
