  • 3 lbs beef chuck roast
  • 2 large yellow onions, sliced
  • 2 cups low-sodium beef broth
  • 4 garlic cloves, minced
  • 1 tbsp fresh thyme (or more to taste)
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 2 tbsp olive oil for searing

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef chuck roast with salt and pepper. In a heavy-bottomed pot, heat olive oil over medium-high heat and sear the roast on all sides until browned (about 3-4 minutes per side). Remove from pot.
  3. Add sliced onions to the same pot and cook until golden brown (10-15 minutes), stirring occasionally.
  4. Stir in minced garlic and thyme during the last couple of minutes of onion cooking time. Pour in beef broth and balsamic vinegar, scraping up brown bits from the bottom.
  5. Return the roast to the pot, cover it, and place it in the oven.
  6. Slow cook for 3-4 hours until fork-tender. Serve with sauce drizzled on top.
