Ingredients
- 1 lb boneless skinless chicken thighs
- 8 oz smoked Andouille sausage
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced

- 2 cups long-grain rice
- 14 oz canned diced tomatoes (with juices)
- 4 cups chicken broth
- 1 tbsp Cajun seasoning
- Salt and pepper to taste
Instructions
- Chop chicken thighs into bite-sized pieces and slice Andouille sausage.
- In a large pot over medium heat, add oil and sauté chicken and sausage until browned (about 5 minutes). Remove and set aside.
- In the same pot, cook onion and bell peppers until softened (about 5 minutes), then add garlic for another minute.
- Stir in rice, diced tomatoes, chicken broth, cooked meats, and Cajun seasoning. Mix well.
- Bring to a boil; then reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.
- After cooking, let sit covered for an additional 5 minutes before fluffing with a fork.
