  • 1 ½ cups graham cracker crumbs
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 1 cup fresh key lime juice
  • 1 can (14 oz) sweetened condensed milk
  • Zest of 2 key limes

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of the prepared dish.
  3. In another bowl, whisk together sweetened condensed milk, key lime juice, and lime zest until smooth. Pour over the crust.
  4. Bake for 15-20 minutes until set around the edges but slightly jiggly in the center.
  5. Cool at room temperature then chill in the refrigerator for at least two hours before cutting into squares.
