- 1 lb fresh shrimp, peeled and deveined
- 1 cup (about 4-5) fresh limes, juiced
- 1 medium red onion, thinly sliced
- 1/2 cup chopped fresh cilantro
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 jalapeño, finely chopped (adjust to taste)
- Salt to taste
Instructions
- Cut the shrimp into bite-sized pieces and place them in a glass bowl.
- Squeeze lime juice over the shrimp until completely covered. Cover with plastic wrap and refrigerate for about 30 minutes until shrimp turn opaque.
- While marinating, chop the red onion, cucumber, tomatoes, jalapeño, and cilantro into small pieces.
- After marinating, drain some lime juice but leave about a tablespoon. Add chopped veggies to the bowl with the shrimp.
- Season with salt to taste and stir well to combine all ingredients.
- Serve chilled in bowls garnished with additional cilantro and tortilla chips on the side if desired.
