  • 4 medium zucchinis (about 1.5 lbs), diced
  • 1 large sweet onion, diced
  • 1 bell pepper (any color), diced
  • 2 cups white vinegar
  • 1 cup granulated sugar
  • 2 tsp kosher salt
  • 1 tbsp mustard seeds
  • 1 tbsp celery seeds
  • 1 tsp turmeric
  • ½ tsp black pepper

Instructions

  1. Wash and dice zucchini, onion, and bell pepper into half-inch cubes.
  2. Combine diced vegetables with salt in a large bowl. Let sit for 2 hours to draw out moisture.
  3. Rinse the salted vegetables under cold water and drain thoroughly.
  4. In a large pot, combine rinsed veggies with vinegar, sugar, mustard seeds, celery seeds, turmeric, and black pepper. Bring to a boil while stirring; then reduce heat and simmer uncovered for 30 minutes.
  5. Sterilize canning jars by boiling them or running them through the dishwasher on high heat.
  6. Pour the hot relish into prepared jars while leaving half an inch of headspace. Wipe rims clean before sealing with lids.
  7. Process in a boiling water bath for about 10 minutes. Allow to cool completely.
