  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season both sides of the chicken breasts with salt and pepper. In a skillet over medium heat, warm the olive oil until shimmering.
  3. Sear the chicken for about four minutes on each side until golden brown.
  4. In a bowl, mix halved cherry tomatoes, minced garlic, chopped basil, balsamic vinegar, salt, and pepper until well combined.
