- 1/2 tsp baking soda
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 1 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix oats, flour, baking soda, and a pinch of salt.
- In another bowl, cream butter with brown and granulated sugars until light and fluffy.
- Beat in the egg and vanilla until well combined.
- Gradually mix dry ingredients into wet until just combined.
- Scoop tablespoon-sized rounds onto parchment-lined baking sheets.
- Bake for about 10 minutes or until golden around the edges but soft in the center.
- While cooling, beat cream cheese with powdered sugar and vanilla until creamy.
- Once cookies are cool, spread or pipe cream filling onto half of the cookies and top with remaining halves.
