  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix oats, flour, baking soda, and a pinch of salt.
  3. In another bowl, cream butter with brown and granulated sugars until light and fluffy.
  4. Beat in the egg and vanilla until well combined.
  5. Gradually mix dry ingredients into wet until just combined.
  6. Scoop tablespoon-sized rounds onto parchment-lined baking sheets.
  7. Bake for about 10 minutes or until golden around the edges but soft in the center.
  8. While cooling, beat cream cheese with powdered sugar and vanilla until creamy.
  9. Once cookies are cool, spread or pipe cream filling onto half of the cookies and top with remaining halves.
