- 1 cup fresh Thai basil leaves, chopped
- 3 cloves garlic, minced
- 8 rice paper wrappers
- 2 tbsp low-sodium soy sauce
- 1 tsp chili flakes (adjust to taste)
- 1 cup thinly sliced carrots or bell peppers
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and add minced garlic, soy sauce, and chili flakes. Stir in chopped Thai basil until fragrant.
- While the beef mixture cools, julienne the carrots or bell peppers into thin strips.
- Soak each rice paper wrapper in warm water for about 10 seconds until soft but not soggy.
- Place a wrapper on a clean surface, add about 2 tablespoons of the beef filling and some vegetable strips. Fold over the sides and roll tightly from bottom to top.
- To fry, heat oil in a pan over medium-high heat and cook the rolls until golden brown (about 5 minutes). Alternatively, bake at 375°F (190°C) for about 20 minutes until crispy.
- Serve hot with a dipping sauce made from soy sauce mixed with lime juice or sweet chili sauce.
