  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, and pepper on a baking sheet. Roast for about 25 minutes until tender.
  2. In a large bowl, mash the roasted sweet potatoes until smooth but slightly chunky. Stir in black beans, oats, onion, garlic, cumin, salt, and pepper until well combined.
  3. Form the mixture into patties about half an inch thick and place them on a parchment-lined baking sheet.
  4. Heat olive oil in a skillet over medium heat. Cook patties for about 5 minutes on each side until golden brown and crisp.
