  • 2 cups fresh strawberries, hulled and divided
  • 1 cup heavy cream
  • 1/3 cup granulated sugar
  • 1 cup graham cracker crumbs
  • 5 tbsp unsalted butter, melted
  • 1 tsp gelatin powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter; press into a tart pan. Bake for 10 minutes until golden, then let cool completely.
  2. Blend half of the strawberries into a puree and chop the remaining strawberries; set aside.
  3. In a mixing bowl, whip heavy cream until soft peaks form. Gradually add granulated sugar and whip until stiff peaks form.
  4. Dissolve gelatin in warm water, then mix it into the strawberry puree along with vanilla extract. Gently fold this mixture into the whipped cream before adding chopped strawberries.
  5. Pour the mousse into the cooled crust and chill for at least 2 hours or until set.
  6. Garnish with fresh strawberries before slicing and serving.
