Instructions

- Halve the zucchinis lengthwise and scoop out the insides, saving the flesh.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent; add garlic and cook for an additional minute.
- Add the ground meat to the skillet, browning until fully cooked.
- Stir in diced tomatoes and reserved zucchini flesh; season with Italian seasoning, salt, and pepper. Simmer for about five minutes.
- Stuff each zucchini half with the filling, topping generously with cheese.
- Place stuffed zucchinis in a baking dish covered with foil and bake for 25 minutes; uncover for the last five minutes to brown the cheese.
