  • 1 tsp freshly cracked black pepper
  • 2 tbsp extra virgin olive oil

  • 2 large russet potatoes (about 1 lb)
  • Vegetable oil for frying (enough to fill pot)

Instructions

  1. Wash and peel the russet potatoes, cutting them into thin strips. Soak in cold water for 30 minutes to remove excess starch.
  2. Season both sides of the ribeye steak generously with salt and pepper. Let rest at room temperature for 15-20 minutes.
  3. Heat vegetable oil in a deep pot over medium-high heat until it reaches 350°F (175°C).
  4. Fry soaked potato strips in batches until golden brown and cooked through, about 5-7 minutes per batch. Drain on paper towels.
  5. In a hot cast-iron skillet, add olive oil and sear the seasoned steak with rosemary for about 4-5 minutes on each side for medium-rare.
  6. Remove from heat, cover with foil, and let rest for five minutes before slicing against the grain. Serve with crispy fries.
