  • 1 cup long-grain white rice

  • 2 cups shredded cheddar cheese
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a large baking dish.
  2. In a skillet over medium heat, add oil and sauté chopped onion and minced garlic until soft (about 5 minutes).
  3. Stir in fresh spinach until wilted (about 3 minutes).
