Ingredients

Scale
  • 1 cup stone-ground grits
  • 1 lb fresh or frozen shrimp, peeled and deveined
  • 3 tbsp butter, divided
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning (adjust to taste)
  • ½ cup chicken broth
  • 2 green onions, chopped

Instructions

  1. In a medium pot, bring 4 cups of water or chicken broth to a boil. Stir in the grits while continuously mixing. Reduce heat, cover, and simmer for 20-25 minutes until thickened.
  2. Pat shrimp dry and season with Cajun seasoning. In a skillet over medium-high heat, melt 2 tbsp of butter. Sauté minced garlic until fragrant (about 1 minute). Add shrimp in a single layer and cook for about 2 minutes on each side until pink and opaque. Deglaze with chicken broth.
  3. Stir remaining butter into cooked grits along with salt and pepper to taste.
  4. Spoon grits into bowls, top with shrimp mixture, and garnish with chopped green onions.
