Ingredients
- 4 (6 oz) fresh salmon fillets
- 2 tbsp freshly squeezed lemon juice
- 4 garlic cloves, minced
- 4 tbsp unsalted butter
- 1 lb asparagus, trimmed
- 1 cup cherry tomatoes
- Salt and pepper, to taste
- 1 tsp dried oregano
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Rinse asparagus and cherry tomatoes; arrange on one side of the baking sheet.
- In a saucepan over medium heat, melt butter, then add minced garlic and oregano for about one minute until fragrant.
- Place salmon fillets on the other side of the baking sheet. Drizzle half of the garlic butter over them and season with lemon juice, salt, and pepper.
