Ingredients
- 1 lb fresh carrots, peeled and cut into sticks
- 1 whole bulb garlic
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the carrots, then cut them into uniform sticks.
- Slice the top off the garlic bulb, drizzle it with olive oil, wrap in foil, and place it in the oven alongside the carrots.
- In a large bowl, toss the carrots with olive oil, salt, pepper, and half of the grated Parmesan until well-coated.
- Spread the seasoned carrots on a parchment-lined baking sheet and roast for 25-30 minutes until tender and golden brown.
- Squeeze out the roasted garlic cloves into a bowl, mash them into a paste with additional Parmesan, then mix with the roasted carrots before serving.
