Roasted Garlic and Parmesan Carrots are a delightful side dish that turns ordinary carrots into an irresistible treat. The sweet, caramelized edges combined with the creamy richness of freshly grated Parmesan cheese create a flavor explosion that’s perfect for any meal.

  • 1 lb fresh carrots, peeled and cut into sticks
  • 1 whole head of garlic
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and set aside.
  3. In a large bowl, toss carrot sticks with olive oil, salt, pepper, and half of the Parmesan cheese until well coated.
  4. Spread carrots evenly on a baking sheet lined with parchment paper; add wrapped garlic.
  5. Roast for 25-30 minutes until tender and lightly caramelized.
  6. Carefully unwrap garlic and squeeze soft cloves over roasted carrots. Sprinkle remaining Parmesan on top while warm.
