Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix pumpkin puree, eggs, and melted butter until smooth. Combine with dry ingredients until just mixed.
- Pour batter into cupcake liners until two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean. Cool in the pan for five minutes before transferring to wire racks.
- For frosting, beat softened butter with powdered sugar and vanilla until fluffy. Frost cooled cupcakes.
