Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, eggs, and melted butter until smooth. Combine with dry ingredients until just mixed.
  4. Pour batter into cupcake liners until two-thirds full.
  5. Bake for 18-20 minutes or until a toothpick comes out clean. Cool in the pan for five minutes before transferring to wire racks.
  6. For frosting, beat softened butter with powdered sugar and vanilla until fluffy. Frost cooled cupcakes.
