Ingredients

Scale
  • 4 cups all-purpose flour (unbleached)
  • 1/2 cup granulated sugar
  • 2 tbsp cocoa powder
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 cup warm milk (110°F)
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar (sifted)

Instructions

  1. 1. Prepare the Dough: In a large bowl, combine warm milk and sugar. Sprinkle yeast over it and let sit for five minutes until frothy.
  2. 2. Mix It Up: Add melted butter, eggs, cocoa powder, vanilla extract, and half of the flour to the yeast mixture. Whisk until combined. Gradually mix in remaining flour to form a soft dough.
  3. 3. Knead: Turn dough onto a floured surface and knead for five minutes until smooth. Lightly grease a bowl, place dough inside, cover with a damp cloth.
  4. 4. Let It Rise: Allow dough to rise in a warm place until doubled in size—about one hour.
  5. 5. Roll It Out: Roll out dough into a rectangle about half an inch thick. Spread softened butter and sprinkle generously with cinnamon-sugar filling.
  6. 6. Slice & Bake: Roll tightly from one end, slice into pieces (about two inches wide), place in greased baking dish to rise again for thirty minutes while preheating the oven to 375°F (190°C). Bake for twenty-five minutes or until golden brown.
  7. 7. Serve: Drizzle warm cream cheese icing over each roll right after baking.
