- 2 salmon fillets (6 oz each)
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1/2 cup sun-dried tomatoes, chopped (oil-packed preferred)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- Salt and pepper, to taste
Instructions
- Pat salmon fillets dry; season both sides with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Once hot, place salmon skin-side down and sear for about 6 minutes until golden brown. Flip and cook for an additional 3 minutes.
- Remove salmon from the skillet. In the same skillet, sauté minced garlic until fragrant, then add sun-dried tomatoes and heavy cream. Simmer for a couple of minutes until slightly thickened.
- Stir in Parmesan cheese until melted and mix in fresh basil.
- Return salmon to the skillet to coat with the sauce before serving.
