Ingredients

Scale
  • 1 lb boneless chicken thighs
  • 2 large fresh oranges (zested and diced)
  • 2 medium onions (chopped)
  • 4 cloves garlic (minced)
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • 1 cinnamon stick
  • 2 tsp cumin powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Finely chop the onions and mince the garlic. Zest one orange for added flavor.
  2. In a large skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add minced garlic and sauté until fragrant.
  3. Increase heat slightly, add chicken thighs, and season with salt, pepper, cumin powder, and paprika. Cook until browned on both sides (about 6 minutes).
  4. Pour in chicken broth along with diced oranges (reserve some slices for garnish) and add the cinnamon stick. Bring to a gentle simmer.
  5. Cover and let it simmer on low heat for about 30 minutes for flavors to meld.
  6. Remove from heat, garnish with reserved orange slices or fresh herbs as desired, and serve warm.
