  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper. In a skillet, heat olive oil over medium heat and sear chicken until golden brown, about 5 minutes per side.
  2. In another pot, boil water with a pinch of salt, add orzo, and cook until al dente (8-10 minutes). Drain and set aside.
  3. In the same skillet, add minced garlic and sauté for a minute. Pour in heavy cream and simmer gently.
  4. Add spinach to the sauce until wilted (about 2 minutes). Stir in cooked orzo and Parmesan cheese until well combined.
  5. Transfer everything to a baking dish with seared chicken on top. Sprinkle with extra cheese if desired. Bake for about 15 minutes until bubbly and golden.
