  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup orzo pasta
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 4 oz cream cheese, softened
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Season chicken breasts with salt, pepper, and half of the Italian seasoning. Sauté until golden brown on both sides (about 5 minutes each).
  3. Add minced garlic and halved cherry tomatoes to the skillet; sauté until fragrant.
  4. Pour in chicken broth and stir in orzo pasta. Bring to a boil, then reduce heat and simmer until orzo absorbs most of the liquid (approximately 10 minutes).
  5. Stir in softened cream cheese until melted and creamy. Add fresh spinach last and let it wilt.
  6. Transfer skillet to the preheated oven and bake uncovered for about 15 minutes.
