  • 1 can (13.5 oz) full-fat coconut milk
  • 2 ripe mangoes (about 2 cups total)
  • 1/4 cup sugar (adjust to taste)
  • 4 cups water

Instructions

  1. In a pot, bring 4 cups of water to a boil. Add 1/2 cup sago pearls and simmer for 15-20 minutes until translucent. Drain and rinse under cold water.
  2. In another saucepan, heat 1 can of coconut milk and 1/4 cup sugar over medium heat until sugar dissolves.
  3. Peel and chop one mango; blend half into a puree while keeping the other half in chunks for texture.
  4. Combine cooked sago pearls, coconut mixture, and mango puree in a bowl; mix well.
  5. Chill in the refrigerator for at least one hour before serving. Garnish with additional mango slices if desired.
