- 1 cup ripe mango pulp
- 3 large eggs

Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a bowl, mix the flour, 1/4 cup sugar, and cold butter until crumbly. Press the mixture into the bottom of the prepared dish.
- Bake the crust for about 15 minutes until golden brown.
- In another bowl, whisk together the mango pulp, eggs, remaining sugar, and lemon juice until smooth.
- Pour the mango mixture over the baked crust and return it to the oven. Bake for an additional 20-25 minutes until set but still slightly jiggly in the center.
- Allow to cool completely before slicing into bars.
