Ingredients
- 4 medium Russet potatoes, diced
- 6 slices thick-cut bacon
- 1 cup mixed bell peppers (red and yellow), chopped
- 1 medium yellow onion, diced
- 4 large eggs
- 1 cup shredded sharp cheddar cheese
Instructions
- Wash and dice the potatoes into small cubes.
- In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving about 2 tablespoons of grease in the pan.
- Add the diced potatoes to the skillet with the reserved grease. Season with salt and pepper. Cook for about 10 minutes, stirring occasionally until golden brown.
- After 5 minutes, add in the chopped bell peppers and onion; continue cooking until softened.
- Chop or crumble the cooked bacon into bite-sized pieces and mix it back into the potato mixture.
- Create little nests in the hash for the eggs. Crack eggs into these spaces and cover with a lid. Cook until eggs are set (about 5 minutes).
