  • 1 lb Brussels sprouts, trimmed and halved
  • 1/2 cup unsalted roasted peanuts
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar (unseasoned)
  • 2 tsp Sriracha (adjust to taste)
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss halved Brussels sprouts in olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast in the preheated oven for 20-25 minutes until golden brown and crispy.
  4. While roasting, mix soy sauce, rice vinegar, brown sugar, minced garlic, and Sriracha in a bowl until combined.
