- 3–4 lbs beef chuck roast
- 1/2 cup low-sodium soy sauce
- 6 cloves garlic, minced
- 2 inches fresh ginger, peeled and sliced
- 1 large onion, chopped
- 2 large carrots, sliced
- 2 cups beef broth
- 1 tsp freshly ground black pepper
- 1 tbsp brown sugar
Instructions
- Prepare ingredients by chopping vegetables and mincing garlic and ginger.
- In a skillet over medium-high heat, sear the seasoned beef chuck roast on all sides until golden brown (about 4 minutes per side).
- Transfer the roast to a slow cooker. In the same skillet, sauté onions, garlic, ginger, and carrots until softened (about 5 minutes).
- Place the sautéed veggies on top of the roast in the slow cooker. Pour in soy sauce and beef broth; add brown sugar.
- Cover and cook on low for 8 hours or high for 4 hours until tender.
