This dish features tender chicken marinated in honey and chipotle sauce, served over fluffy rice and topped with creamy avocado and fresh cilantro. Perfect for busy weeknights or impressing guests, these bowls combine vibrant colors and mouthwatering tastes to create a meal that everyone will love.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/3 cup pure honey
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 3 garlic cloves, minced
  • Juice of 2 limes
  • 1 cup long-grain white rice
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro

Instructions

  1. In a medium bowl, whisk together honey, chopped chipotle peppers, minced garlic, and lime juice to create the marinade.
  2. Place chicken breasts in a resealable bag or shallow dish; pour marinade over them and let marinate in the fridge for at least one hour (or overnight).
  3. Cook rice according to package instructions while the chicken marinates.
  4. Heat oil in a skillet over medium-high heat; cook marinated chicken for about six minutes on each side until fully cooked (165°F/75°C). Add reserved marinade during the last minute.
  5. Fluff the cooked rice and divide it among bowls; slice or shred the chicken and place on top of the rice.
  6. Top with sliced avocado and chopped cilantro before serving.
