- 1 whole turkey (12–14 lbs)
- 1 cup unsalted butter (softened)
- 3 tablespoons fresh rosemary (chopped)
- 3 tablespoons fresh thyme (chopped)
- 3 tablespoons fresh sage (chopped)
- 4 garlic cloves (minced)
- 1 lemon (sliced)
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F (165°C).
- Remove giblets from the turkey and pat dry with paper towels. Season inside and out with salt and pepper.
- In a bowl, mix softened butter, minced garlic, chopped herbs, and a pinch of salt to create herb butter.
- Gently loosen the skin over the breast area; spread half of the herb butter underneath and rub the remaining over the outside of the turkey.
- Stuff lemon slices and herb stems into the cavity.
- Place turkey on a roasting rack in a large pan; roast for approximately 13-15 minutes per pound until it reaches an internal temperature of at least 165°F (74°C), basting every hour.
- Let rest for at least 20 minutes before carving.
