Instructions
- 1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- 2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy using an electric mixer.
- 3. Beat in the egg yolk and vanilla extract until well combined.
- 4. Gradually add the flour while mixing on low speed until just combined to form a soft dough.
- 5. Scoop tablespoon-sized portions of dough, roll them into balls, and place on the prepared baking sheets two inches apart.
- 6. Use your thumb to create an indentation in each ball and fill with about half a teaspoon of fruit jam.
