Description

Healthy Tuscan Chicken Pasta is a vibrant and satisfying dish that brings together succulent chicken, sun-ripened cherry tomatoes, and fresh spinach in a creamy sauce. This quick and easy recipe is perfect for busy weeknights or special gatherings, offering a comforting meal that’s both nutritious and delicious. Bursting with flavor and color, this pasta dish will delight your family and impress your guests.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup heavy cream (or low-fat alternative)
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian herbs. Heat olive oil in a skillet over medium-high heat. Cook the chicken for about 6 minutes on each side until golden brown. Remove and set aside.
  2. In the same skillet, reduce heat to medium and sauté minced garlic for about 1 minute until fragrant.
  3. Add cherry tomatoes and spinach to the skillet. Cook until the tomatoes soften (about 3 minutes).
  4. Stir in heavy cream and Parmesan cheese; let simmer for about 2 minutes until creamy.
  5. Return the chicken to the skillet, allowing it to absorb flavors for an additional 5 minutes on low heat.
  6. Serve hot, garnished with more Parmesan if desired.
