  • 4 large bell peppers (any color)
  • 1 lb lean ground turkey
  • 1 cup cooked quinoa or brown rice
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray for baking

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a baking dish with olive oil.
  2. Slice the tops off the bell peppers and remove the seeds. Chop the tops and set aside.
  3. In a skillet over medium heat, sauté chopped onions, minced garlic, and reserved pepper tops until fragrant. Add ground turkey and cook until browned; drain excess fat.
  4. Stir in cooked quinoa or rice, diced tomatoes, Italian seasoning, salt, and pepper; simmer for 5 minutes.
  5. Stuff each bell pepper with the turkey mixture and place them upright in the baking dish.
  6. Cover with foil and bake for 25 minutes. Remove foil during the last 5 minutes to lightly char the peppers.
