- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 cup panko breadcrumbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- Juice of 1 lemon (about 2 tbsp)
- 1 cup full-fat Greek yogurt
- 1/2 cucumber, grated and drained
- 1 clove garlic, minced
- Juice of 1/2 lemon (about 1 tbsp)
- Salt and pepper to taste
- Fresh dill for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground turkey, parsley, garlic, oregano, panko, salt, pepper, and half the lemon juice. Mix gently until combined.
- Shape the mixture into meatballs using about two tablespoons per ball and place on the baking sheet.
- Bake for 20-25 minutes until golden brown and cooked through.
- While meatballs bake, prepare tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, remaining lemon juice, salt, and pepper in a bowl. Chill before serving.
- Serve meatballs warm with tzatziki sauce drizzled over the top.
