  • 4 cups fresh spinach
  • 8 oz crumbled feta cheese
  • 3 large eggs
  • ½ cup heavy cream
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté the chopped onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in the fresh spinach and cook until wilted (about 3 minutes).
  4. In a large bowl, whisk together eggs, heavy cream, oregano, salt, and pepper.
  5. Combine the sautéed spinach mixture with the egg mixture and fold in crumbled feta.
  6. Pour into the prepared baking dish and bake for 30-35 minutes until golden brown on top and set in the middle.
